I've seen Hing Kee many many times, but never tried it and I am glad I did this time.
There used to be a male chef hand making the noodles infront of the restaurant, I believe they opened another restaurant at the end of the street (because I saw the same chef making noodles there, I forgot the name). Anyway, Hing Kee is popular for their freshly made steam Soup Dumplings or Xiao Long Bao 小籠包 and their hand-made noodle. Seats were very tight, you are really eating with your neighbors, we didn't really mind.
Menu was very diverse, Chinese, Vietnamese, even Japanese. Boyfriend and I shared a bowl of hand-made beef noodle 手工牛肉拉麵刀削麵 and freshly made Soup Dumplings/Xiao Long Bao 現做小籠包. I didn't see the noodle chef, but saw the Xiao Long Bao lady, she was busy kneeing the dough and making the bao, very interesting! Noodle portion was pretty good.
Beef Brisket Hand-Made Noodles - excellent noodle texture. You can choose from variety of noodle width, we picked the 2nd thickest, perfect Al-Dente! We picked a lighter soup noodle, cause we had a spicy meal the night before. Beef brisket was extremely tender, the way it should be.

Soup Dumplings/Xiao Long Bao - 8 pcs to an order, and freshly made and steamed. Originally we wanted to order the crab roe and pork soup dumpling, but they were out. So we ordered the regular pork soup dumpling. They were pretty good, but I was hoping the dumpling would not leak ... it did leak a little ... still taste very good!
